Raw Snickers Slice - TO DIE FOR!!


Hi Everyone!

I have a to die for recipe for you!! I just made this Raw Snickers Slice the other day... ok maybe two days ago... and the whole thing is already gone! Not just by me of course I did have some helpers who loved this slice so much they said for me to share the recipe with everyone.

Before I get into how to make the slice Ill first explain what "Raw" means for those of you who are unsure. Raw is the dietary practice of eating only uncooked, unprocessed foods. Depending on the philosophy, or type of lifestyle and results desired, raw food diets may include a selection of fruits, vegetables, nuts, seeds, eggs, fish, meat and dairy products. So basically.. only natural products! 

This slice is gluten free, lactose free, vegan, refined sugar free, paleo, and dairy free! So it ticks all the boxes. And I can honestly say... its on par taste wise with my Caramel slice!

Now to the fun stuff!! Magical Ingredients!

Base:
1 cup of peanuts (raw or lightly roasted)
1/2 cup pitted dates soaked in 2tbs hot water
1/2 tsp cinnamon 
1tsp vanilla extract
2tbs cacao powder 
pinch salt 

What to do:
Process peanuts in food processor until a fine breadcrumb then add in other ingredients and process until well combined. Line a slice tin with baking paper and spread the mixture out evenly over a tray. Place in fridge/freezer to set.

Nougat Layer:
1 cup soaked cashews (about 2 hours)
50gm coconut oil
2tbs rice malt syrup, pure maple syrup or honey
1/2tsp vanilla essence

What to do:
Blend cashews until a smooth paste, add in other ingredients and blend until smooth and creamy. Top the base layer with the nougat and place back in the fridge / freezer to set. 

Caramel Layer:
200g dried dates (soaked in a few tbs hot water for at least 15 minutes) - use the left over liquid to reach desired consistency)
2tbs coconut oil
3tbs natural peanut butter
3tbs hulled tahini 
3tbs honey, maple syrup or rice malt syrup
1/2tsp sea salt
1tsp vanilla extract

What to do:
Blend all ingredients in food processor until it forms a smooth caramel - I like my caramel to be thick but add some water or a dash of coconut cream to thin out if mixture is too thick. Once the mixture is smooth, add in a big handful of peanuts and stir into caramel by hand. Spread out evenly over the nougat layer and place back in the fridge / freezer to set. 

Chocolate Layer:
100g of cacao powder 
80g coconut oil
20g honey, maple syrup or rice malt syrup

What to do:
Blend all ingredients (ensure coconut oil is melted) in a processor and place over the top of the slice. 

Once slice is set cut into small squares and enjoy!! Be sure to cut it into small pieces as this is slice is very sweet :)
