My healthy Anzac biscuits - perfect guilt free treat for the long weekend!


My healthy anzac biscuits are super quick and easy to make and they will be a hit for this long weekend! And not only that.. they are guilt free!! 

The best part is, most of the ingredients you will already have lurking around in your cupboard... So you will need the following:

3 cups rolled oats 
1 cup desiccated coconut 
1 cup flaked almonds
6 tbs macadamia nut oil, olive oil or melted butter (I used olive oil)
6 tbs honey 
2 tsp vanilla bean extract
1/2 tsp baking soda 
2 tbs water 
1/2 cup wholemeal plain flour

Combine oats, coconut and almonds into a food processor and process until breadcrumb consistency.
Add oil, honey, baking soda and vanilla. 

Mix well for about 30 seconds or until just combined. 

Add the water and the flour and mix until a soft dough forms. 

Roll out dough between baking paper and cut out around 3 6cm round cookies. Place on a lined baking tray.

Bake for around 15 minutes at 150 degrees or until golden brown.

Store in an airtight container - will keep for around 5 days.
