So my favorite little deli that is just down the road from me has started selling homemade healthy muesli bars. They are so delicious and most importantly... guilt free!! I wanted to replicate this muesli bar but add in my own little twist to it.
I decided to put together a combination of oats, buckwheat, coconut, almonds, poppy seeds, goji berries and sunflower seeds with some melted goodness off honey, tahini, coconut oil and raw nut butter to create these deliciously healthy bars that are full off natural goodness! And again.. so simple and versitile!
My healthy treat to you to keep the sweet cravings at bay this winter!
Healthy Muesli Bars
1/3 cup sunflower seeds
4tbs poppy seeds or sesame seeds
2tbs roasted buckwheat
1 cup rolled oats
1 1/5 cups unsweetened desiccated coconut
2/3 cups flaked almonds, toasted
1/4 cup goji berries
2tbs coconut sugar
1tbs raw nut butter
1/5 cup coconut oil
Combine all dry ingredients in a bowl.
In a saucepan over low heat melt together tahini, nut butter, coconut oil and honey.
Once melted mix well into the dry ingredients, pour and press into a 7inch square tin.
