Nothing says Australia Day like Lamingtons!


Australia Day to be means a hot summer day, sausages on the barby and a traditional jam filled sponge square dipped in chocolate icing and tossed in coconut cake... of course! A lamington!! 

 

Well this year I have changed it up a little bit by turning my favorite flavoured cake.. yes you all probably know if it by now.. Red Velvet!! Into a lamington! Yes this has been one of the best creations I think I have come up with so far in the way of using my red velvet cake recipe. 

So I wanted to say a big Happy Australia Day to all of you Auzzies and also people from a far! You can celebrate the day by baking these delicous red square sponges of delicousness that we call lamingtons. 

Red Velvet Lamingtons 

¼ cup red food colouring
2tbs cocoa powder
1 ½ tsp vanilla essence
½ cup softened butter
1 ½ cups caster sugar
2 large eggs
1 tsp salt
2 ½ cups flour, sifted
1 cup buttermilk
1 tsp white vinegar
1tsp baking powder

Oven 180 degrees
Stir together cocoa and red food colouring and set aside.
Beat the butter and sugar until light and fluffy adding in eggs one at a time. Beat in the cocoa mixture and salt.

Add the flour followed by the butter milk.
Stir the vinegar and baking powder together (it will foam). Quickly fold it through the batter. Pour into a square or regtangle cake tin and bake for 30 minutes.

Once baked remove from oven and set aside until completely cool. 

For the chocolate icing you will need:
5 cups icing sugar
3/4 cup cocoa powder
3/4 cup milk
20g butter

Make Chocolate: icing Place icing sugar, cocoa, milk and butter in a heatproof bowl over a pan of simmering water. Stir over heat until combined and smooth. Place coconut in a bowl.

Using a fork, toss one piece of sponge in icing to coat. Drain off excess icing. Toss in coconut to coat all over. Transfer to a baking paper-lined tray. Repeat with remaining sponge, icing and coconut. Set aside for 1 hour to set. Serve.

Note: For the jam lovers! You can also cut your lamingtons in half and spread with Jam before dipping into chocolate.
