Raw healthy gingerbread men - GF, DF


Hey everyone!

I have a great recipe for you this week that I have manage to perfect just this morning! My Fiancé is currently on a strict diet... which means I can't bake him any cakes or cookies whatsoever... I have to admit this has been challenging. And I have to add in, he loves loves loves gingerbread!

SO! I have a solution... now I bake him raw, healthy alternatives. I have a fantastic banana bread that I make which is GF and DF as well as healthy oat cookies and cupcakes. But these healthy gingerbread men are my absolute favorite.. so I thought id share my recipe with you! I hope you enjoy them as much as we do. And also they are only 80cal per man!

Ingredients
1 cup almond meal
1 cup gluten free flour
1tsp vanilla extract
1tsp ground cinnamon
1tsp ground ginger
1/2 tsp ground nutmeg
1tsp baking powder
6 fresh dates, pitted
1 free range egg
2tsp pure maple syrup or honey
1/4 cup coconut oil, melted

Preheat oven to 170 degrees

In a food processor, combine almond meal, gluten free flour, vanilla, cinnamon, ginger, nutmeg, baking powder and dates. Process until it creates a crumb like consistency.

Add in your whisked egg, honey or maple syrup and coconut oil and pulse until combined and a dough has come together. Add more GF flour if the dough is to sticky. 

Roll out your dough and cut 20 gingerbread men. Use a fork and spoon to create indents. 

Bake for 7 - 10 minutes rotating in between.
